We are thrilled to welcome Chef Won Kim of Bridgeport’s beloved Kimski to the Firehouse Loft, joined by special guest Chef Margaret Pak of the acclaimed Thattu, for an exclusive, one-night culinary collaboration.
As the creative force behind Kimski, Chef Won is a pioneer of Korean-Polish street food renowned for his ethically sourced, scratch-made cooking. Over the past decade, Kimski has served as a vibrant incubator for chefs to explore new concepts, and Chef Won brings that same collaborative spirit to the Loft. Partnering closely with local urban farmers, his cooking turns hyper-seasonal produce into unexpected ferments, house pickles, and bold, soulful comfort food.
Joining him for this special evening is Chef Margaret, who has redefined Chicago’s dining scene with Thattu. Paying playful homage to the soul-stirring coastal flavors of Kerala, Southwest India, her journey from the corporate world to a James Beard Award semifinalist and a spot on The New York Times "50 Best Restaurants in America" is nothing short of remarkable. Her cooking is a harmony of tradition and innovation, celebrating coastal seafood, creamy coconut, and dynamic spices.
Together, these two visionary chefs are bridging their distinct heritages and techniques. This one-of-a-kind collaboration will pair Kimski’s inventive, seasonal ferments and playful street-food ethos with Thattu’s vibrant South Indian coastal heat and aromatic spicing.
The Experience: Hosted in the historic STOCK Firehouse Loft, this evening offers a rare, front-row look at the creative synergy between two of the city’s most dynamic culinary voices. With only 12 seats available just steps from the kitchen, you will enjoy a hyper-seasonal, multi-course tasting menu driven by fresh local ingredients, vibrant scratch-made components, and deep-rooted storytelling. Expect an evening that balances heat, heart, and casual elegance in a setting that feels less like a restaurant and more like an intimate private dinner party among friends.
Seats are limited for this special dinner, alcoholic beverages will not be provided. Guests are encouraged to BYOB.
